Chocolate "Peanut Butter" Ice Cream

A good basic chocolate ice cream recipe. This is rich, creamy and very satisfying. Instead of cashews, try pili nuts!!! (Or mix cashews and pili nuts).
Don't have young Thai coconuts? Try Coconut Cream Concentrate and water. Once you get a nice, thick creamy consistency in the blender - follow any of the options for making ice cream and you should have a delicious dessert to share with your loved ones!

"Peanut Butter" Fudge Ripple Ice Cream

This does taste as creamy and yummy as it looks! FYI - this bowl is only about 2.5 inches in diameter. These are delicious mini scoops, not full sized scoops. The flavor and texture are so rich you only need a small amount to feel satisfied. INDULGE without guilt!

Papaya-Banana Swirl Ice Cream

OHhhhhhhhhh HEAVENLY GOODNESS! A friend of mine blessed me with her old Champion Juicer. Just prior to giving it to me, it was accidentally dropped (and survived), but needed a few replacement parts that had cracked. I managed to find a really good deal on some of the parts, including a BLANK PLATE (for under $3.00) at Amazon.

I had NO idea what I was missing!!!! Such creamy deliciousness

Dairy-Free, Raw Ice Cream


Ok! Bad picture! It was evening, and it was metling. I had very little lighting, but wanted to capture it. You'll have to trust me..It was GREAT! Some time back, I did a post on  how to prepare ice cream using a juicer and blank plate. It's been awhile since I pulled out the old Champion...but I'm sooooo glad I did. Last night I literally threw together some Blueberry Banana Coconut Ice Cream. LOVE LOVE LOVE!!!

Creamy Coffee Bliss Ice Cream

I'm still having fun with my adopted Champion Juicer. Frozen fruit ice cream is easy, but I wanted to use some of the amazing Medicine Flower extracts that I have, and see what creamy goodness I could come up with. You do have to plan for this in advance and wait for the mixture to freeze, but it's worth the wait. This was amazing!! I can't wait to try other flavors!!!!

Butterscotch - Rum Ripple Ice Cream

This is by far one of my all time favorite ice cream recipes. A friend told me that if I continued to make this for him, he'd give up Ben & Jerry's forever! The photo pictured is for visual only. Everyone ate it so fast, I never got a photo! This recipe is definitely enhanced using Medicine Flower extracts. If you don't have them, feel free to use an alternative, but these are the BEST. This ice cream is amazing! A little goes a long way, but you might want to double this. I served 6 small portions, but it was plenty!

My Champion - Mint Chocolate Chip Ice Cream

I'm so sorry to be redundant here, but I'm having a BLAST making ice cream in My Champion Juicer. Let's see, in the past two weeks, I've made these flavors: papaya, mango, coconut, strawberry, blackberry, peach, pineapple, coffee, and now, mint chocolate chip. With each creation, W and I are amazed at the consistency.

Waffle Cone Ice Cream Rolls

I’m super excited about this new treat!  This does require some preparation, but since they are frozen, you can make a large batch and have them on hand. Ok, I can’t promise they’ll stick around long...but they are worth the love put into preparing them. I served these at my chiropractors’ office and wish I had gotten video of the smiling faces as folks tasted these precious bite-sized delights!  Let’s get started!

Vanilla Fudge Ice Kreme

I L O V E ice cream!! Raw, living ice cream with NO DAIRY - is amazing! Any day, any flavor. Here's my stab at vanilla fudge. (I swirled it a bit too much, so it looks more chocolate than vanilla). But it's vanilla with chocolate swirl. And it is YUMMMMMMM!

Bachelorette Party Fun

 It's always fun to demonstrate some of my more decadent dishes to the uninitiated.This past weekend, I had the honor of hosting my first Bachelorette Party for a group young ladies that were pretty much unfamiliar with raw vegan. Wasn't that an awesome gift to give a friend? For me, it was a JOY to watch them sample Pistachio Pesto Pizza, Margherita Pizza, Almond Milk, Spiralized Pasta with Creamy Marinara,Cookies 'n Cream and Chocolate Rum-Caramel Swirl Ice Cream!!! The Bride-to-Be got spoon-licking privileges!!

Simply Mahvelous Mocha Ice Cream

I couldn't wait for this to freeze, and ate it as soft-serve.  I am not even a coffee drinker, but am constantly using my Medicine Flower C O F F E E extract.  W brought me home a bottle of coffee extract from Whole Foods to compare, since it's a fraction of the price. I can't even bring myself to use the other bottle. One whiff from the bottle tells all. There is NO comparison between the two. I LOVE this stuff! They are super concentrated, so you only need a few drops.

Chocolate Nut Bread - (Ice Cream Sandwiches)

My two favorite ingredients: Coconut and chocolate. This recipe has a date and nut bread consistency, and it is very moist and chewy.  Use round cookie cutters to create sandwich rounds. Fill with Crazy Coconut Ice Cream (or your favorite flavor), and freeze as Ice Cream Sandwiches.The photo does not do this recipe justice, but this bread is fabulous!

Brownie Cake with Mocha Almond Fudge Cream

Okay you gluten-free, dairy-free, health nuts...I purchased these cute molds and wanted to try something super decadent. Drooling yet?  If you don't have access to this type of mold, no worries...use the cake recipe as a deep dish crust and fill with the Mocha Almond Cream.  You may have some extra brownie cake batter - SHUCKS! Eat it as is, freeze it in small molds for a fun frozen treat, or create little brownies with cake mixture, stuffed with cream and dehydrate for a several hours. Decadent AND nutritious. No bake...no guilt.

Soba and Kelp Noodles With Roasted Eggplant

W and I visited with my daughter "L" and her boyfriend today. They recently moved into their new condo, and we had not seen the little love nest yet. L wanted to make us dinner, but due to my dietary restrictions, I suggested that I bring the ingredients and she and I prepare the meal together. We agreed upon Soba Noodles with Roasted Eggplant.  (Note: I have not tried it, but this dish could be converted to raw if you eliminate the soba noodles, use only kelp and/or spiralized zucchini, and dehydrate the eggplant for an hour or more instead of roasting).
