For those of you following my blog, you know i'm on a root kick...and one of the roots my doc wants me to have a tiny bit of each day..horseradish root. I made some kick-ass horseradish, but it's really potent and I needed to come up with a milder alternative. The goal was to create a hummus, however, this could be used as a veggie dip, hummus, condiment in wraps, etc. Once you prepare the horseradish, you can make this as hot or mild as you like. Irish Moss Paste is optional, but I explain in another post how to make it and freeze it so you have it on hand when needed. Here's a great article on the benefits and cautions in using horseradish.

Papaya-Banana Swirl Ice Cream
OHhhhhhhhhh HEAVENLY GOODNESS! A friend of mine blessed me with her old Champion Juicer. Just prior to giving it to me, it was accidentally dropped (and survived), but needed a few replacement parts that had cracked. I managed to find a really good deal on some of the parts, including a BLANK PLATE (for under $3.00) at Amazon.
I had NO idea what I was missing!!!! Such creamy deliciousness

Onion Wrap
One of the very first foods I gave up when I started eating raw living food, was bread. I learned how the gluten acts like "GLUE" in the gut, sticking to it, fermenting, clogging, and wreaking havoc on my body. Here's a lovely way to enjoy a good wrap without the negative side effects.

Baked Macaroni and Cheese
Posted with permission from Chef Matthew Kenney from his awesome book EverydayRaw - page 98
COMFORT FOOD! Who doesn't miss a nice big bowl of macaroni and cheese every now and then? Well, you can have it! It's cold here in NJ, and I need to revisit this lovely dish. I'm so excited that Matthew was so kind to let me post this easy to prepare, yet satisfying recipe.

Purple Corn Water
Another fun find from The Raw Food World was Purple Corn Kernels. I originally purchased them with the intent of making blue corn chips, however, discovered just how potent these lil kernels are. What makes purple corn such a beautiful, deep shade of purple is a pigment called anthocyanin, one of the most active antioxidant substances in the vegetable world.

The Journey - Scrub it away!!!
(Painting by Lindsey E. Shevkun)It has been about 2.5 months since I started "the program." I have been so immersed in getting this page together and posting recipes along with decent photographs, that I have been avoiding broaching anything personal. So here I go...
Some positive things noted: I am in better spirits with less mood swings. W and I are getting along better than ever. Although, the IC is still present in my life, I think I look better, my skin is clearer, eyes brighter. I have observed those things in W as well.
