Chocolate-Raspberry-Vanilla Pudding Parfait (Raw Vegan)

It is 85 degrees F and I'm not feeling very hungry for dinner, so I created this fabulous triple pudding parfait. By using either fruit (fresh or frozen), or dried fruit powder, you can prepare this in almost any flavor. I chose Chocolate, Raspberry and Vanilla.

This is not an exact science. If you don't have young Thai coconuts, you can use a combo of dried coconut, cashews and chia. Adjust water as needed too. Don't be afraid to experiment until you get the consistency you desire. My parfait is chillin' in the fridge and I can't wait to dig in...

She Put de Lime in de Coconut...(Smoothie)

She drank 'em bot' up...Yes I did! Simple, easy and delicious.

You can prepare many variations of this...eliminate, substitute, or add to your heart's content...Just enjoy enjoy enjoy! I used water kefir and young Thai coconut (water and meat), but you can use almond milk or any nut milk you enjoy.

Green Creamsicle Smoothie

Simply delicious! This smoothie always brings me back to my childhood and Creamsicle phase. Now I can enjoy this magnificent vanilla/orange combo...and get my greens on too!

Pictured is the Creamsicle Smoothie without greens, topping the same recipe with greens. Both are equally delicious.

Coconut Champagne Mango Crackers

Oh, the joy of Raw Food preparation. Remember my "Award" winning recipe for Pasta & Champagne Mango Cream Sauce? (If not, check it out). I was preparing it for a demo and had some leftover "sauce." What to do? Add a few more ingredients...and make crackers! This delicious treat is a cross between cracker and roll-up. I encourage you to add other ingredients and experiment with different textures. I've included the items I added to the sauce to make these crackers...but there are so many variations you can choose.

Not-So Black "Licorice Candy" Wheels

Black licorice has always been a love of mine, and while sucking on licorice root is pleasant, nothing has come close to the CHEWY texture of black licorice candy. Here's my first attempt at raw "licorice" wheels. They're still in the dehydrator,and should get a bit darker and firmer than pictures. Chewy, delicious, and enough "licorice" flavor from the star-anise lingers that lingers nicely on your tongue.

Almond Milk Heaven

I have published How to Make Almond Milk before, but this morning, I was reminded of it's stunning simplicity. For those of you who have never tried it, I URGE you to give it a shot! I'm in Heaven as I sit here sipping one of my all time favorite beverages. All you need is a blender and either a nut milk bag, paint bag(you can get a Lowe's), or a piece of cheese cloth, doubled.

Caramel Sauce

This sauce is very reminiscent of caramel topping that I used to love to drizzle over ice cream sundaes. I've recreated this luscious topping and have used it on brownies, granola bars, cookies, raw ice cream...or just licked it off the spoon. If you want the sauce to stay liquid, follow directions below. If you want it to be more solid when it dries, add melted cacao butter to recipe, apply to dessert, and let chill. This is on the sweeter side. Adjust your sweetener as needed.

Asian UnFried Rice

Prepare this delicious dish in minutes and gently warm it in the dehydrator, or, eat as is. It's colorful, delicious and so very light. I'm due for a trip to the store and used what I had available. I would add snow peas, fresh parsley, shredded carrots and sprouts. Select your favorite veggies and create this dish your family and friends will adore.
