White Chocolate Cheesecake - Happy Anniversary W!!!

I made this over the holidays for my family and my daughter thought it was such a hit, she declared, "Mom, Mom...you need to sell these..seriously, they are amazing...and no one has to know they are healthy." Although, I wished she were more enthusiastic in appreciating the healthy factor as a positive thing, I still took what she said it as a huge compliment. Tonight I tried to re-create the recipe for my 6th anniversary with W, and it came out super light and fluffy. These were created in MINI cheesecake molds, and each one is about 1.5 inches in diameter...kinda like "dessert sliders." I'm thinking of doing a selection of 2-3 flavors as a dessert for dinner guests. How elegant would that be!

Veggie Crisps, Wraps or Bullion "Cubes

Using Creamy Veggie Pulp Sauce, pour mixture onto a non-stick dehydrator sheet and create a wrap, crisps or bullion for future soups or sauces, or just serve over spiralized zucchini.

Walnut Pate

This pate is reminiscent of tuna or chicken salad, but so much better. Loaded with omega 3's, walnuts are considered the ultimate "brain food." Walnuts can also triple meletonin levels in the body, so if you have trouble sleeping, you might want to give walnuts a try in the evening. Try making pesto with walnuts and herbs instead of pine nuts.

Mint Chocolate Chip Smoothie

I've posted a Mint Chocolate Chip smoothie previously using almond milk and real mint. Today, I created a similar smoothie with a few different ingredients. This is why I love Medicine Flower extracts so much! You can create an amazing variety of flavors that titillate your taste buds. The flavors are SUPER concentrated, so you only need a couple of drops!

Cher was one of the most loving spirits I've ever met and touched the lives of so many, educating us all about the raw food lifestyle. She was open, loving, non-judgmental and inspirational. Chewy Chocolate Coco-Nutty Super Puffs

I was traveling to visit my kids and granddaughter, and grabbed a bunch of ingredients, blended them up, and dehydrated them so I'd have a healthy snack to munch on while away. My daughter ended up eating most of them after her rigorous work-outs. I ended up leaving them behind for her to finish up. We stored them in the freezer, and found they tasted even better that way! As always, many of the ingredients can be eliminated or replaced. Let your creative juices flow...

Mexican Veggies

Great veggies to serve with zucchini noodles, kelp noodles, or taco shells. Feel free to add more veggies to the mix!  You can marinate them overnight if you don't plan to dehydrate them. Otherwise, marinate for an hour and spread on dehydrator tray for about 2 hours. Serve! They are amazingly tender...better than stir fried or roasted!

Purple Taco Shell

The idea was to make a SOFT tortilla shell. Silly me, forgetting that corn is crunchy, not flexible. I'd have to do some major tweaking to get a soft shell. We ended up with wonderful purple corn taco shells. We stuffed them with "refried beans" made with almonds which were amazing. Honesty, I don't think anyone would know they were not refried beans!  They certainly would never guess they were made with almonds! We also added Guacamole, Salsa and Mexican Veggies

Green Soup

I found this recipe by EarthSprout and finally got to make it last night. YUMMMM! It was absolutely perfect for a summer-like day. While the coconut water is optional, I used it and believe it contributed greatly to the flavor. This is a keeper for my warm weather soupies!

I honestly can't say its my all time favorite, but it's very tasty and W seemed to REALLY liked it a lot, and it was a nice change.

My Champion - Mint Chocolate Chip Ice Cream

I'm so sorry to be redundant here, but I'm having a BLAST making ice cream in My Champion Juicer. Let's see, in the past two weeks, I've made these flavors: papaya, mango, coconut, strawberry, blackberry, peach, pineapple, coffee, and now, mint chocolate chip. With each creation, W and I are amazed at the consistency.
