And That's a Wrap!!! - A Coconut Wrap(per)!!!
If you have a dehydrator and have access to young Thai coconuts...these are a breeze. If not, there are certainly other ways to make wraps, but I was focusing on quick and easy with the tools I have. Delicious and super light! Continue to dehydrate, and instead of a flexible wrap, you have a light, crunchy snack! Switch up seasoning and create something sweet, savory and/or spicy! The variations are limitless! I chose a Chipotle Wrap below...

Sweet Potato Latkes (Pancakes)
I love creating healthy, raw vegan versions of recipes that are connected to "comfort foods" from my childhood. Potato Latkes were a favorite that mom used to cook up. They always make me feel happy, and remind me of a connection to family when we all lived nearby and could celebrate together. With my mom just passing recently, I'm revisiting some of her Traditional Recipes, and challenging myself to make a raw version. SUCCESS! While they look a little dry, they are moist, chewy and full of flavor. Once you put the raw applesauce on top, they soften and rehydrate the outside of the pancake. The onion flavor and texture tingle my taste buds and really remind me of Grammy's Latkes!

Mocha Almond Fudge Crunch - Breakfast Cereal
I LOVE sprouted quinoa. Once it's sprouted (which is very simple and only takes a day or so), this recipe is quick and easy! See below for sprouting instructions.
Note- don't like mocha? Eliminate coffee extract. Want to avoid cacao? Replace it with carob powder.

RT's Quick and Easy Cranberry Relish
Enjoy the day, eat as healthy as you can and you'll be happier the next day...but enjoy whatever it is you decide to eat...JOY and gratitude are most important tomorrow!! There is no room for guilt. Besides, it won't change anything. Decide ahead of time what you plan to eat and then let it go. Rawfully Tempting Raw Chocolate Fruit and Nut Bark
This was gone gone gone before I could get a good photo. Tempering raw chocolate is possible, but challenging. I'm not a greatchocolatier as I don't have the patience or the equipment, however, I try to attempt manually tempering whenever possible. For a quick..."I don't care about fussing" treat...simple - DO NOT temper. Throw this tastiness together, and store in the refrigerator or freezer. WARNING: It will melt in your hands..so EAT it quickly, or break into smaller, bite-sized pieces. This will cure any junk food craving for sweets! There are several optional ingredients. I hope you use this blog for educational purposes, so even if you don't choose to use all of the suggested ingredients, you may at least become aware they exist.

Living Tree Smoothie Spectacular
One of my favorite online stores, Living Tree Community sent me a lovely sample pack of their vibrant living butters. Yesteday, although it's really easy, I wasn't in the mood to cut open a coconut, and opted to create a spectacular blend of these delicious ingredients without having to make a nut milk or coconut milk base. I have to say, everything from this store vibrates with LOVE...and this smoothie, was indeed SPECTACULAR. Turmeric Butter, Mesquite, Maca and extracts are always optional, but take some time to read about them. The added flavors are great, but they are also super nutritious! I suggest you try some of these products...but if you don't have them available, improvise with almond butter, or any combination of nut butters that seem to go well together. This is one of my quick and easy smoothies..sort of a "cheater" smoothie..making nut milk using butters and water..no straining, no mess.

Muesli Breakfast Mix - "Cream of NO-Wheat"
I'm in LOVE with this delicious blend. Just so you know, some of these ingredients are not raw. Feel free to substitute with a sprouted/dehydrated version. It's Winter on the East Coast, and popped Amaranth and toasted sesame seeds bring out the flavor in this mix! This is one of the tastiest mixes I've made and a favorite in our home.

Fig Halvah (Sesame) Smoothie

"Open sesame"—the famous phrase from the Arabian Nights—reflects the distinguishing feature of the sesame seed pod, which bursts open when it reaches maturity.
Growing up, Halvah, (a ground sesame paste, fudge-like snack), was a huge treat in our household, and I've always loved the flavor and consistency. This smoothie is very reminiscent of my favorite childhood treat.

Pecan-Carob Maca Milkshake
Oh Yum! Thank you Living Tree Community for another fantastic product. Of course this is lick-off-the-spoon-fantastic, but I was in a hurry and wanted to toss together a quick, satisfying beverage. I didn't quite measure everything, so amounts are approximate, but this is so reminiscent of a frothy milkshake. Feel free to adjust as needed.

Dairy-Free (Mocha) Almond Yogurt
I was inspired to revisit almond yogurt when a client asked me to prepare some for her. I had forgotten how easy it was. Once the plain yogurt was made, I moved on to Mocha Almond Yogurt. What a delight! I even added some leftover Water Kefir I had in refrigerator, along with probiotic powder. I didn't quite measure things exactly, but will list to the best of my ability. Enjoy!

Rawfully Tempting Herb Stuffing
It's getting close to that time of year again...This stuffing is superb and can be ground into the most amazing "bread crumbs." Totally dry it makes a great munchy mix. Rehydrate it or only partially dehydrate it, for a soft, fluffy stuffing. I'm loving this recipe and the house smells so good too!

Rawfully Tempting Red Slaw
This delightful slaw is quick and easy to prepare. I apologize that it's been so long since my last post, but I've been enjoying my new grandson, Leo Bronze. His mommy is an artist and wanted a color for his middle name, so bronze it is. Being Grammy to a precious newborn requires some quick prep delights. I hope you enjoy this recipe.

Sunny Cherry Mango Smoothie
I had some leftover mango in the freezer along with delicious fresh cherries. On top of that, a tray of freshly sprouted sunflower shoots was smiling at me. Why not combine them all?
