Quick and easy, delightful summer treat. Blend, chill, and serve!!!
There are so many variations that are possible. Add wild blueberries, bananas, pineapple, etc. almost anything goes. Add water or almond milk, only as needed. Feel free to switch out maple syrup for a few dates.
I used fresh young Thai coconut meat, but you can use dried unsweetened coconut too. Soak for one hour to rehydrate, drain and follow recipe. It may not be as creamy and I suggest using almond milk instead of water. I have a video on you tube demonstrating how to open these coconuts. It’s fun and pretty simple. These make great ice pops too!!!

Sunny Cherry Mango Smoothie
I had some leftover mango in the freezer along with delicious fresh cherries. On top of that, a tray of freshly sprouted sunflower shoots was smiling at me. Why not combine them all?

Magnificent Mango Hummus - (Raw Vegan)
After preparing a Coconut Mango Cream Pie that was to LIVE for, I still had some leftover Champagne Mangos (Ataulfo) from a case that needed to be used. I also froze a bunch to use for "ice cream" at another time. So today, I whipped up this Magnificent Mango Hummus and served it in a few romaine lettuce leaves. I could see this going really nicely on a salad, but would also make a great dip, if thinned out a bit. This is definitely a QUICK and EASY recipe!

Coconut Champagne Mango Crackers - (Raw Vegan)
Oh, the joy of Raw Food preparation. Remember my "Award" winning recipe for Pasta & Champagne Mango Cream Sauce? (If not, check it out). I was preparing it for a demo and had some leftover "sauce." What to do? Add a few more ingredients...and make crackers! This delicious treat is a cross between cracker and roll-up. I encourage you to add other ingredients and experiment with different textures. I've included the items I added to the sauce to make these crackers...but there are so many variations you can choose.

Cucumber Apple Mango Ginger Juice
As some of you know, when I tried to juice a year ago, due to my health issues, I ended up with some negative reactions. My holistic physician suggested I abstain from it for awhile. For one year, I avoided juicing and opted to stick with green smoothies. It worked, and I'm so glad I decided to be patient and trust my practitioner, and am now able to handle juicing several times a week without any ill side effects. For the most part, I still enjoy my green smoothies, but a few times a week, I experiment with juicing. The blank plate that I purchased to go with my Champion juicer, enables me to make delicious and amazingly creamy "ice cream" and nut butter. (see pics below). I love adding new things to my daily palette.

Visiting..
with my dear Medicine Flower friends in Oregon and totally enjoying the GREEN that surrounds us. I saw the Redwoods for the first time in my life, along with The Coast. I am in awe of the beauty! Walking on the beach and enjoying the sunset was so healing and relaxing. The energy here is fabulous. My body feels rejuvenated and my soul is at peace. What a comfortable place to be! I have never felt so completely enveloped by our Earth Mother. This was an amazing trip and I look forward to coming back soon! Loved finally meeting the folks at Medicine Flower and getting to sample their amazing product line.

Mango and Banana Cream Pie
This scrumptious pie was quite different from any raw dessert I've made so far, and it looks so pretty.
It freezes great (without berries on top), but be sure it's totally defrosted before serving. It tastes MUCH better.

Mango Tropical Bliss Doughnuts
I tend to do a lot of my food prep intuitively. I started out, attempting to create a tasty bagel after being tempted by my friend Native Kitten. That was my intent. However, when I started playing in the kitchen, and grabbing this and grabbing that, what I ended up creating, was a doughnut. Yup, a tropical bliss, doughnut. It's chewy and moist and "feels" good to sink your teeth into...and adding just a few drops of my new extracts, gave them an extra mango kick! So much fun!
