Deeeeeelish!!! It’s creamy and light for an enjoyable summer snack. I can eat this for lunch.
Feel free to use almonds instead of cashews, it won’t be quite as creamy, but still delicious. A great dairy free snack your non vegan friends would never guess did not have milk. Other fruit variations work well too.

Dairy-Free, Raw Ice Cream

Ok! Bad picture! It was evening, and it was metling. I had very little lighting, but wanted to capture it. You'll have to trust me..It was GREAT! Some time back, I did a post on how to prepare ice cream using a juicer and blank plate. It's been awhile since I pulled out the old Champion...but I'm sooooo glad I did. Last night I literally threw together some Blueberry Banana Coconut Ice Cream. LOVE LOVE LOVE!!!

Blueberry and "Tapioca" Parfait
This was so easy, light and refreshing, and only took me about 20 minutes to prepare. I didn't really measure the ingredients, but I'll try and estimate for you. White chia seeds absorb the liquid and give the pudding a very tapioca like texture. Add a good vanilla extract, and you have an absolutely divine dessert!

Raw Vegan Blueberry Cheesecake

Blueberry Bliss Smoothie
So CREAAAAMY and satisfying. This was almost a yogurt consistency and it made me think about trying to make raw yogurt again, and then adding blueberries to that....but for a drinkable delight..try this.

Vanilla - Blueberry Chia Parfait
Another quick and easy, yet impressive looking breakfast, snack or dessert. Enjoy the many benefits of chia seeds by including them in ice cream, bread, pudding, salad, crackers, etc. I served this lovely parfait to dinner guests that were not familiar with RAW, and they loved it.
If you are not a fan of coconut, neither of us think this tastes like coconut at all. Young coconut meat adds texture and give it a nice creamy body and base, but you taste the vanilla and blueberries...that's it!!! For special holidays and to add color, add a layer of fresh strawberries or mango, etc.

Mango and Banana Cream Pie
This scrumptious pie was quite different from any raw dessert I've made so far, and it looks so pretty.
It freezes great (without berries on top), but be sure it's totally defrosted before serving. It tastes MUCH better.

Lemon Cheesecake (Topped with Pineapple Sauce)
For his 60th birthday, W wanted something lemon this year...so I came up with a Lemon Cheesecake, topped with pineapple sauce. It turned out fabulous, although we all agreed it tasted better without the pineapple sauce. Maybe strawberries or blueberries would be even better. But the lemon cheesecake was awesome and tasted even better the second day. Very light and creamy. The Birthday Boy was very happy!

So Berry Simple - Ice Pops
This is so simple, I almost didn't post it, but sometimes, we forget the most obvious. I saw these star - shaped ice pop molds in Whole Foods and was like a little kid. Ideas were flashing through my head of all the fun flavors that I could create for the summer. Okay, so I'm thinking, FUDGESICLE!!!

Pleasingly Purple Smoothie
In keeping with the purple theme, and continuing to use the purple corn water, I made a refreshing "green" purple smoothie. My professional taster, W, gave it a thumbs up!

A PEARfect Morning - Green Smoothies - Day #4, 5, 6, 7
Green Smoothie - Day #7
The sun is shining and it's another beautiful day! My pears were ripe, so I added one to my smoothie and def like that flavor. W also brought home some golden beats and I threw a couple of those beautiful leaves into the mix. Arugula, Swiss Chard, kiwi, pear, apple, 1/2 avocado, frozen blueberries, flax seeds (ground), goji berries and dates. Also see the Chocolate Mind Bender...

Introduction - Green Smoothie Feast - Days # 1, 2 and 3
