I am extremely grateful for the blessings in my life...for the people near and dear to me...and for the gift of Living Food! This Pumpkin-like Cheesecake, along with the amazing Frosting added a sweet bit of bliss to an already perfect day! This dessert has been enjoyed by ALL sorts of foodies!

White Chocolate - Raspberry Cheesecake
A dear friend of ours brought over some fresh picked raspberries. Oh, what to do....CHEESECAKE! The blend of white chocolate and fresh raspberries made my mouth water and my taste buds tingle with delight! I love these mini 4" spring form pans. Instead of one cake, I made two miniature cheesecakes and brought one to a friend's house for lunch! This way W got to have some too! Otherwise, I'd make this in a 7" spring-form pan. Or, skip the crust, and pour into individual goblets and serve as a delicious mousse. Enjoy!

Horseradish, Garlic and Dill Cheese - Fermented
Fermented nut cheeses can be eh...and they can be RAWlicious! This batch turned out super RAWlicious. A lot of you have asked for the recipe. I accidentally misplaced my notes and then found them, but had to decipher my own writing. This can be a daunting task. haha! Feel free to eliminate any of the ingredients you don't like. Use the base, and add your choice of herbs and spices. One should note that adding fresh herbs to fermented cheese will shorten the shelf-life of the cheese, but if it's good, no worries because it won't last that long. Taste it. If it tastes bad, it probably is.

Beet and Horseradish Dip/Hummus
For those of you following my blog, you know i'm on a root kick...and one of the roots my doc wants me to have a tiny bit of each day..horseradish root. I made some kick-ass horseradish, but it's really potent and I needed to come up with a milder alternative. The goal was to create a hummus, however, this could be used as a veggie dip, hummus, condiment in wraps, etc. Once you prepare the horseradish, you can make this as hot or mild as you like. Irish Moss Paste is optional, but I explain in another post how to make it and freeze it so you have it on hand when needed. Here's a great article on the benefits and cautions in using horseradish.

White Chocolate - Cranberry Mousse Parfait
A hint of white chocolate, delicately placed between layers of a light cranberry mousse. If you don't have Irish moss paste, you can try increasing the amount of ground chia, but the consistency may not be as silky. Another option would be to use young Thai coconut water and meat in place of the filtered water. MMM..

Strawberry Custard Cream Pie
I made this awhile ago, and never posted it. Someone asked for it, so here ya go. This is a nice light summer treat, and the only nuts are in the crust, so you could make the "custard" without it, if you wanted to avoid nuts altogether. I didn't measure everything, so the recipe below is approximate. Good thing about raw food, is you can taste it as you go along. So...taste it and adjust measurements as you see fit!

Raw Vegan Blueberry Cheesecake

Chocolate Silk Mousse Cake
H E A V E N L Y! I loved it because unlike processed chocolate mousse, this had a lovely bittersweet flavor. Creamy and rich, but not too sweet. The consistency was fabulous!

Raw Autumn Pear Tart
W brought home a bunch of pears in different varieties. Time to revisit this amazing tart.
Wrote previously...OH YUM! Autumn is here... and I was in need of a really good COMFORT dessert! W brought me a bunch of pears and I had to use them before they got too ripe. This came out extraordinary! It tastes a lot like apple pie, except, I think I may like this better. The pears were sweet, tender and juicy. I used Bartlett Pears and then added a Red Pear for a little more texture.

Strawberry Custard (Dairy Free/Nut Free)
This mixture reminded more of a light, creamy custard or yogurt consistency which is very different from the Rich Chocolate Fudge Mousse that I posted recently. No nuts in this recipe!!! It's very refreshing, and makes an incredible summer dessert or snack.
I'm still experimenting with Irish moss and while it can be a bit tricky, the textures you can achieve are astounding, and definitely worth looking into.
