I pray you are all safe, sound and healthy during these challenging times. Self-care is super important right now! Take care of YOU!!! I treated me to this quick and easy version of my cacao bark. I know some of these ingredients may be new for some of you, but well worth investigating. There are several great online resources. CRUNCHY! DELICIOUS! NUTRITIOUS! Not for the faint of heart! This treat is super crunchy and chock full of kale and therefore, probably best saved for those more experienced healthy eaters....but it is delicious!!! Feel free to spice it up even more! Get your greens on!!!

This can be made in a low temperature oven too...I’ve just not tried it. Comment below if you give this a whirl!

Choco Peppermint Caramel Dreams

Ok, consider this a warning...these are a little messy to make....but a dream to savor.  Have the kids help. They’ll love licking excess off their fingers! Make extra and freeze so you have them on handl They won’t last long.  They really won’t last long! Lol.

Wild Blueberry Coconut Pudding

Wild blueberries are significantly more nutrient dense than their cultivated cousins and unlike other fruits, maintain their magnificence even frozen.  This pudding took minutes to make and is one of my favorite dishes. This was breakfast today.

Add some bananas and dried coconut for a decadent, delicious, and nutritious treat. As each coconut varies in volume and ratio, meat:water, you’ll have to play it by ear with regard to chia, cashews and additional water, if needed.

Please comment if you made and enjoyed this recipe!

Waffle Cone Ice Cream Rolls

I’m super excited about this new treat!  This does require some preparation, but since they are frozen, you can make a large batch and have them on hand. Ok, I can’t promise they’ll stick around long...but they are worth the love put into preparing them. I served these at my chiropractors’ office and wish I had gotten video of the smiling faces as folks tasted these precious bite-sized delights!  Let’s get started!

Sprouted Cinnamon Grammy Crackers for Big and Little Kids

As a proud Grammy, caring part time for my grandson, I've decided to create new food ideas perfect for toddlers and their mommas. I'm thrilled to present this amazing nutrient-dense treat. Not a Mom or baby? No worries...you'll enjoy these too!   It's NUT, Dairy, Gluten and Sugar FREE! Don't have a dehydrator? Try a low temperature oven..I like to use a  dehydrator and I've not personally tried it, but I can't imagine it would be difficult.

New York "Egg Cream" - Rawfully Tempting Style

Who remembers New  York style Egg Cream? My mom prepared these for us when we were younger using seltzer, chocolate syrup, vanilla extract, and milk.  I think the original recipe was made with egg, but ours never had egg in them. This was just a quick and  yummy beverage Mom whipped up! Well, I'm so excited because I created a HEALTHY ALTERNATIVE that is so very reminiscent of this childhood elixir!!!  When I took my first sip there was an instant recognition...and flashback.  I gave a sip to W and asked, "What does this remind you of?" Not being from NY, he sensed it was familiar, but did not grow up with it.  If you lived on the East Coast in the 60's...when the soda man actually delivered the seltzer bottles to your home, then you know what an Egg Cream is...

Rawfully Tempting Raw Chocolate Fruit and Nut Bark

This was gone gone gone before I could get a good photo. Tempering raw chocolate is possible, but challenging. I'm not a greatchocolatier as I don't have the patience or the equipment, however, I try to attempt manually tempering whenever possible. For a quick..."I don't care about fussing" treat...simple - DO NOT temper. Throw this tastiness together, and store in the refrigerator or freezer. WARNING: It will melt in your hands..so EAT it quickly, or break into smaller, bite-sized pieces. This will cure any junk food craving for sweets!  There are several optional ingredients. I hope you use this blog for educational purposes, so even if you don't choose to use all of the suggested ingredients, you may at least become aware they exist.

"Root Beer Float" Smoothie

As a little girl I'd get utterly giddy at the thought of a Root Beer Float, and to this day, it's connected to many happy childhood memories. As a recipe developer, my goal is to RE-create comfort foods, replacing processed ingredients with healthy ingredients. While visiting a local spice shop, I came across this Root Beer Extract and could not resist. The aroma alone, sent me down memory lane. I was inspired to create! While not an actual "soda" the flavor is quite reminiscent of Root Beer Floats. Just thinking about some raw vegan vanilla ice cream wiht this..YUM!  But for now, this smoothies, inspired by childhood memories, please this little girls' taste buds..I hope you enjoy it as much as I did.

Living Tree Smoothie Spectacular

One of my favorite online stores, Living Tree Community sent me a lovely sample pack of their vibrant living butters. Yesteday, although it's really easy, I wasn't in the mood to cut open a coconut, and opted to create a spectacular blend of these delicious ingredients without having to make a nut milk or coconut milk base. I have to say, everything from this store vibrates with LOVE...and this smoothie, was indeed SPECTACULAR. Turmeric Butter, Mesquite, Maca and extracts are always optional, but take some time to read about them. The added flavors are great, but they are also super nutritious!  I suggest you try some of these products...but if you don't have them available, improvise with almond butter, or any combination of nut butters that seem to go well together. This is one of my quick and easy smoothies..sort of a "cheater" smoothie..making nut milk using butters and water..no straining, no mess.

Fig Halvah (Sesame) Smoothie

"Open sesame"—the famous phrase from the Arabian Nights—reflects the distinguishing feature of the sesame seed pod, which bursts open when it reaches maturity.

Growing up, Halvah, (a ground sesame paste, fudge-like snack), was a huge treat in our household, and I've always loved the flavor and consistency. This smoothie is very reminiscent of  my favorite childhood treat.

Pecan-Carob Maca Milkshake

Oh Yum! Thank you Living Tree Community for another fantastic product. Of course this is lick-off-the-spoon-fantastic, but I was in a hurry and wanted to toss together a quick, satisfying beverage. I didn't quite measure everything, so amounts are approximate, but this is so reminiscent of a frothy milkshake. Feel free to adjust as needed.

Dairy-Free (Mocha) Almond Yogurt

I was inspired to revisit almond yogurt when a client asked me to prepare some for her. I had forgotten how easy it was. Once the plain yogurt was made, I moved on to Mocha Almond Yogurt. What a delight! I even added some leftover Water Kefir I had in refrigerator, along with probiotic powder. I didn't quite measure things exactly, but will list to the best of my ability. Enjoy!

Sunny Cherry Mango Smoothie

I had some leftover mango in the freezer along with delicious fresh cherries. On top of that, a tray of freshly sprouted sunflower shoots was smiling at me. Why not combine them all?

This was such a pleasant change and W and I enjoyed it a lot! Remember this is just a suggestion. Please feel free to make any changes, depending upon what you have available at home.

Mango Almond Milk

YUM! YUM! YUM! Simple, light and totally refreshing. For a quick, easy, and delightful beverage that you can prepare in minutes, try this!  Feel free to add additional fruit, as desired, but the simplicity of this made my taste buds smile!

Sprouted Rum Buckwheat Crunchies

Sprouted Buckwheat Crunchies can be made in almost any flavor...just change the extracts. My favorite flavors are rum and mint, but caramel is yummy too! Use the basic recipe and switch up extracts for variety.  Store these in an airtight container, or glass ball jar in the freezer and always have them on hand.
