Zippy Zuchini Hummus

Quick, easy and delicious. Goes great with Carrot Ginger Crackers. I served this to a group of non-raw foodies and it was a hug hit! Comment below if you’ve made this! I’d love to hear.

Spicy BBQ RAWsh Kebobs

Raw vegan veggie kebabs are the bomb! When I discover a good thing, I try to find multiple ways to use it. For instance, last week I posted the Spicy BBQ Zucchini Chips and because of this outrageous BBQ Sauce, the chips were jaw-dropping outrageous! Between the two of us and friends, they don't hang around long! I thought it might be interesting to create a kebab, using the same BBQ sauce on veggies. Oh yeah!  I hope you enjoy this as much as we did!

Creamy Red Pepper and Garlic Salad Dressing

Now that I'm eating huge salads every day with lots of roots and wilted kale, I'm playing around with creamier dressings to compliment the heavier salads. I had lots of leftover zucchini from the BBQ chips I made, so I tossed it in the blender and came up with this very light dressing. Leave out the avocado, and you've got a fat-free dressing.

Spicy BBQ Zucchini Chips (RAWBQ)

A friend gave us some overgrown zucchinis. Large circumference zucchinis do not spiralize well. So, how about making some "potato" chips? These are so crazy reminiscent of BBQ potato chips, I can't believe it! Warning - they are very spicy, so cut down on the hot red chili powder and cayenne if you want a tamer version.  You may want to double this recipe...they are amazing!

Dill and Caraway Wraps (with Spirulina)

Looking for something a little different, with an extra kick of super nutrition? Try one of these special GREEN wraps!!! I'm going to re-work this one a bit. It's pretty intense..You can stuff it with a Sunflower Seed Pate, Walnut Pate, salad, hummus, whatever your pleasure. I made these rather thin and they dehydrated within 5 hours.

Zucchini Hummus and Grassini Sticks

I prepared these BBQ Grissini Sticks that were created by EarthSprout . I'll post the changes I made below. I'm going to let them dehydrate a few extra hours to get more crunchy, but W and I did a sneak preview. Conclusion: The Zucchini Hummus goes great with the Grissini, AND celery stalks are easy, and compliment the mix. Hummus is Quick and Easy!

Leftovers

Last night I made a spectacular Mexican Style Cauliflower Rissoto.  Rather than waste any leftovers, I took the remaining "Sauce" and Rissoto and threw this meal together in about ten minutes!!!

Creamy Veggie Sauce on Zucchini Pasta

This delicious recipe is so quick and easy and I was amazed how satisfying it felt. It's very cold here today and there was a concern that this would not feel so good. Boy was I wrong! I enjoyed this meal without even warming it up. Adding a bit of Spicy Kim Chi helped add a bit of warmth to the dish, and using delicious ready-made Kim Chi made this recipe super simple!. This is a keeper.

Onion Wrap

One of the very first foods I gave up when I started eating raw living food, was bread. I learned how the gluten acts like "GLUE" in the gut, sticking to it, fermenting, clogging, and wreaking havoc on my body. Here's a lovely way to enjoy a good wrap without the negative side effects.

Asian Arame/Seaweed Salad

Arame is a species of seaweed or kelp that has a mild, semi-sweet flavor. Arame comes in a dried form and due to it's mild flavor, can be reconstituted and added to dishes without impacting the flavor. Just one serving of arame provides over 100 percent of the daily value for iodine and 50 percent of the daily requirements for calcium. Arame has been reported to improve overall immune function, and condition of hair skin and nails. Due to it's high content of lignans it has been the focus of several anti-cancer studies.

UPDATE - I now replace arame with ATLANTIC COAST SEA VEGGIES, DULSE or KELP FLAKES.

Oodles of Noodles, Lotsa Pasta, and Other Spirally Thangs!

I taught this Pastapalooza Class at Organic Avenue. Using two different spiralizers, I and came up with a few fun treats. Spiralizers are two of my favorite kitchen tools, and I could not imagine my life without them!

RAWsh Kebobs

My sweetheart, W, was craving veggie kebobs the other night. I had seen a photo that someone posted recently with raw kebobs, so I figured I'd give it a shot. They came out very tasty. You can experiment with different spices and sauces. I'd let the veggies marinate overnight next time, but a very nice light dish. The pineapple really enhanced the flavors.

Spicy Red Tahini Sauce on Zucchini Noodles

Simple and delicious. This is a quick and easy meal to fix and so very tasty!!! I added some yummy "meat" balls, and it was the perfect combo. For more info on spiralizing noodles, please check out this post.

Super Quick Asian "Noodles"Garden Salad

OHhhhhhh My Gosh! SO quick and So easy. The only problem with this, is that I did not make enough of it and want MORE! This is so light and refreshing. It's a great side salad for your SAD friends, or a main course. Cucumbers and summer squash make this a very cooling dish. Suggestion: Serve with Sunflower Seed Pate.

RT's Champagne Mango Cream Sauce on "Pasta"

Delicious, light, refreshing, satisfying, seasonal. This dish was my wining recipe a the Glastonbury Whole Foods Cook-Off, hosted by celebrity chef Andrea Beaman in her Unlock the Taste of  Summer Tour.

Eggplant Casserawl

Revisiting: This light and tasty dish is my lazy version of raw lasagna and worth revisiting for those of you that may have missed it. No marinara sauce required, and I added a quick version of macadamia nut cheese. This was served with  spiralized zucchini and marinated broccoli (can use mushrooms). Feel free to add additional toppings and seasonings to your liking.

Veggie Pulp Burgers With Wasabi Guacamole

Don't know what to do with all of that juice pulp? Here's an easy fix to that problem. Only thing missing in this photo are the broccoli sprouts, and maybe a slice of raw bread.  I plan on freezing anything that is left, which makes last minute dinner prep super easy. Just remove from freezer and let defrost, or pop in dehydrator. Cut up some fresh veggies, a nice salad, sprouts and you have a feast!

Red Hot Fire cRAWkers

These are somewhat similar to Veggie Crisps, but spicier, with a strong cumin/lime flavor. Great with salsa!!! Just like the Veggie Crisps, the flavor POPS in your mouth and really titillates your taste buds!! They are loaded with kale, celery tops, parsley, hemp, flax, and other nutrient dense foods. Unlike flax crackers, these are light, and can be spread thin to create a potato chip consistency, or  a little thicker, to make a crunchy cracker. I LOVE THESE!  Use your own veggie pulp and seasonings and create your own version.
