This is a quick and easy dish to prepare, and can be served either cold or gently warmed. Feel free to add your favorite garnish. Once the sauce is made, it only takes a few minutes to put this lovely dish together. Serve with your favorite raw corn chips.

Peanut Sauce With Veggies with Noodles
I served this tasty dish over bean thread noodles. If you want to keep the dish 100 percent raw, use kelp or zucchini noodles. W loves bean thread noodles, especially in winter. This was yummy! It's all about choice, so you are free to serve this dish however you prefer. The sauce is super yum!May 4, 2010
Creamy Wild Mushroom and Spinach Pasta
Inspired by this delicious quiche recipe, I concocted an incredibly tasty cream sauce, served over a combination of kelp and zucchini noodles. I also used Eden's artichoke pasta (in photo), for W. I don't do pasta, but will allow myself a very small helping of these.

Soba and Kelp Noodles With Roasted Eggplant
W and I visited with my daughter "L" and her boyfriend today. They recently moved into their new condo, and we had not seen the little love nest yet. L wanted to make us dinner, but due to my dietary restrictions, I suggested that I bring the ingredients and she and I prepare the meal together. We agreed upon Soba Noodles with Roasted Eggplant. (Note: I have not tried it, but this dish could be converted to raw if you eliminate the soba noodles, use only kelp and/or spiralized zucchini, and dehydrate the eggplant for an hour or more instead of roasting).
