Ohhhh, this is a keeper! It didn’t come out at all like I was expecting, but so much better. What started out as a creamy carrot soup, gone green, turned into a guacamole love bowl. Get out your corn chips!!! This is one hearty meal!!!!!

Creamy Red Pepper and Garlic Salad Dressing
Now that I'm eating huge salads every day with lots of roots and wilted kale, I'm playing around with creamier dressings to compliment the heavier salads. I had lots of leftover zucchini from the BBQ chips I made, so I tossed it in the blender and came up with this very light dressing. Leave out the avocado, and you've got a fat-free dressing.

Mexican Style "Rissoto"

Soooo good, I practically licked the plate clean. Yesterday, I posted Chef Russel Jame's Cauliflower Rice in a Creamy Cheese Sauce recipe video, along with my own version of the recipe. Tonight, I was on a roll and inspired to create a totally different flavor. You can do this. See how easy it is? Just changing up some of the herbs and spices, gives a whole new style to this dish. Cauliflower "Rice" and Creamy "Cheese" Sauce
I've been posting some real "Quick and Easy" recipes the past few days. W is still away, and when I prepare food for myself, I want it to be seriously simple. Chef Russell James is at it again and posted a few awesome videos. One of them contained this cauliflower recipe, and like me, he is encouraging you to PLAY in the kitchen and let yourself be creative. Take a basic recipe and run with it. This is what I did after watching his videos.

Creamy Carrot Soup
This was yet another quick and easy recipe that I threw together in a flash and was pleasantly surprised at how absolutely full-bodied and flavorful it turned out. I accompanied this lovely soup with some of my Veggie Pulp Crackers that I had dehydrated from the Creamy Veggie Sauce on Zucchini Pasta.
F A B U L O U S!!!! I will definitely make this again. When people claim raw food prep takes too long, they really have no idea. There are so many wonderful quick and easy recipes that can be thrown together in a matter of minutes. The cumin and lime blended so well with the carrot. One of my favorite quick blender soups so far! (Select "Quick" in the CATEGORY drop down menu and see for yourself).

Cucumber and Avocado Soup
I whipped this together tonight in about 10 minutes. This is a super quick and easy recipe that makes a great summer soup. Refreshing, satisfying and deeelicious.

Veggie Pulp Burgers With Wasabi Guacamole
Don't know what to do with all of that juice pulp? Here's an easy fix to that problem. Only thing missing in this photo are the broccoli sprouts, and maybe a slice of raw bread. I plan on freezing anything that is left, which makes last minute dinner prep super easy. Just remove from freezer and let defrost, or pop in dehydrator. Cut up some fresh veggies, a nice salad, sprouts and you have a feast!

Primavera Frittata
This is so simple and quick to make and it serves up beautifully. Yummy enough to serve to your non-raw foodie friends. I used a large round cookie cutter as a mold, so you could make mini frittata as an appetizer that would look outstanding and totally impress your guests!

Magnificent Chocolate Ganache
A rich, dark chocolate dessert that has lots of uses. It can be used for decorating, filling, icing, or whipped up and enjoyed like mousse.
Coconut oil is a common ingredient in many cacao treats, and it works quite well. Personally, however, I don't always want my dessert to taste like coconut. I've been experimenting with cacao butter and cacao paste and OH MY GOODNESS...while they may be a bit pricey, these ingredients really step your sweet treats up a notch or two!!! And, a little goes a long way!

Veggie Pot Pie
Creating a raw version of comfort food is always fun for me. Baked Macaroni and Cheese was one of these, and now, Veggie Pot Pie. I still need to do a little work on the crust and will update that as soon as I figure it out, but the filling was de-lish. Serving the filling over spiralized zucchini would be a fabulous option!

Spaghetti With Sausage And Peppers
It's so wonderful to be able to sit down, eat a plate of sausage, peppers, onions and mushrooms, over pasta, and not feel all stuffed and bloated afterward!!! And here's a sneaky way to add more greens that your kids and family won't suspect: toss some chopped kale into the blender with your marinara sauce. This tasty dish was served over a combination of kelp and spiralized zucchini.

Kelp Noodles in Creamy Avocado Pepper Sauce
Simple, quick, light and delicious...adapted from a recipe by rawmama. Kelp noodles are really fun, but you have to know how to use them, or they seem too rubbery. Soak them in water with a little lemon juice and see how soft they become. Their neutral flavor, gently accompanies whatever dressing or marinade you choose. Sometimes I'll mix them with spiralized zucchini to add more texture.

Creamy Chocolate Mousse Cake
Fabulous!Creamy! Rich, chocolaty, and not too sweet. I added an optional middle layer, using some Almond Butter Chia Pudding and added a tiny bit of psyllium husk powder to thicken it up. The middle layer blended into the rest of the cake.....but you can see a thin light colored line thru the middle. That's the pudding!

Rawfully Tempting Veggie Burger
I've tried Ani's Sun Burger and it was okay, but had too much flax for my taste. I like the consistency and flavor of this new recipe. It's just what I was looking for. I served it with a couple of slices of Sprouted Kamut Olive Bread I had in the freezer, and topped the burger with avocado, red onion, tomato, lettuce, and a couple of raw Peruvian olives. A raw catsup pairs nicely with this.

Wilted Kale Salad with a Creamy Chipotle Dressing
Delightful and creamy! A wonderfully nutritious salad with a nice kick to the dressing. Thanks to Russell James for this super recipe.
I don't have a high speed blender yet. Next time, I'd do this in the Food Processor, but even with the tiny avocado chunks, this was super tasty.

Creamy Chocolate Peanut Butter Mousse Cake
I'm just mad about mousse! Can you tell? I warned you that I wasn't done with mousse making yet!
I took this to a party of non-raw foodies and it was such a joy to see someone's doubting face transform to one of joy, once they tasted it. Their jaws dropped, and their eyes lit up with surprise, as they proclaimed, "That's REALLY GOOD!" Hopefully, I've enlightened a few people, and maybe even inspired a few to try something similar on their own. That's what gives me the most pleasure.
