This pate is reminiscent of tuna or chicken salad, but so much better. Loaded with omega 3's, walnuts are considered the ultimate "brain food." Walnuts can also triple meletonin levels in the body, so if you have trouble sleeping, you might want to give walnuts a try in the evening. Try making pesto with walnuts and herbs instead of pine nuts.

Thai Sauce and Noodles With Marinated Asparagus
Perfectly creamy, light and refreshing. Great for warm weather. Aside from opening a young Thai coconut, this dish is about as quick and easy as they come. It's served here as an entree, however, would make a lovely side dish, or exquisite lunch. This is truly something even your non-raw friends and family will enjoy.

Lasagna With Kelp Noodles and Marinara
This is great for a rainy, raw night. It's comforting, warming and satisfying and a meal you could easily serve to your SAD friends. While there are several parts that make up this dish, it can be prepared rather quickly with a little practice. The best part, there are plenty of leftovers for tomorrow night!!

Kelp Noodles in Creamy Avocado Pepper Sauce
Simple, quick, light and delicious...adapted from a recipe by rawmama. Kelp noodles are really fun, but you have to know how to use them, or they seem too rubbery. Soak them in water with a little lemon juice and see how soft they become. Their neutral flavor, gently accompanies whatever dressing or marinade you choose. Sometimes I'll mix them with spiralized zucchini to add more texture.

Creamy Wild Mushroom and Spinach Pasta
Inspired by this delicious quiche recipe, I concocted an incredibly tasty cream sauce, served over a combination of kelp and zucchini noodles. I also used Eden's artichoke pasta (in photo), for W. I don't do pasta, but will allow myself a very small helping of these.
