I love these, and my grandkids LOVE them too. It’s a great nutrient-dense treat to include in their packed lunches for school or daycare!!!<br>

Use your creativity and swap out a few ingredients. Add a dash of cinnamon and pinch of cayenne for more depth of flavor. Increase melted cacao for a more fudgey version. It’s all good!<br>

Wild blueberries are significantly more nutrient dense than their cultivated cousins and unlike other fruits, maintain their magnificence even frozen. This pudding took minutes to make and is one of my favorite dishes. This was breakfast today. <br>

Add some bananas and dried coconut for a decadent, delicious, and nutritious treat. As each coconut varies in volume and ratio, meat:water, you’ll have to play it by ear with regard to chia, cashews and additional water, if needed.<br>

There are so many variations that are possible. Add wild blueberries, bananas, pineapple, etc. almost anything goes. Add water or almond milk, only as needed. Feel free to switch out maple syrup for a few dates.<br />

I used fresh young Thai coconut meat, but you can use dried unsweetened coconut too. Soak for one hour to rehydrate, drain and follow recipe. It may not be as creamy and I suggest using almond milk instead of water. I have a video on you tube demonstrating how to open these coconuts. It’s fun and pretty simple. I made these lil treats for my grandsons...but I really love them. I’ve also made them like Oreo cookies with a cream filling....but here’s the simple version.<br>

Adjust ingredients to make more or less sweet. Taste batter as you go along, and adjust. Like them chewy? Dehydrate around 12 hours. Want them crunchy? Dehydrate at least 24 hours, possibly longer, depending on humidity in your home and other factors. These are delicious.<br>
