Spicy BBQ RAWsh Kebobs

Raw vegan veggie kebabs are the bomb! When I discover a good thing, I try to find multiple ways to use it. For instance, last week I posted the Spicy BBQ Zucchini Chips and because of this outrageous BBQ Sauce, the chips were jaw-dropping outrageous! Between the two of us and friends, they don't hang around long! I thought it might be interesting to create a kebab, using the same BBQ sauce on veggies. Oh yeah!  I hope you enjoy this as much as we did!

Spinach Stuffed Nut Meat Loaf

I previously prepared a nut loaf and while it was very tasty, I prefer this recipe. By adding chopped spinach I was pleasantly surprised at the results. Feel free to nix the spinach filling and just do a basic loaf topped with the "ketchup" as well, but it was much tastier and healthier with the spinach.Try it!

RAWsh Kebobs

My sweetheart, W, was craving veggie kebobs the other night. I had seen a photo that someone posted recently with raw kebobs, so I figured I'd give it a shot. They came out very tasty. You can experiment with different spices and sauces. I'd let the veggies marinate overnight next time, but a very nice light dish. The pineapple really enhanced the flavors.

Burritos

It's HOT here in NJ and the last thing I feel like doing is spending too much time on dinner. I want quick, easy and COOLING! This din din hit the spot and was PERFECT. It was one of those times where I'm eating something raw...and I can just feel that my body is smiling on the inside. Hard to explain, but you just know it's good! Have you experienced that? What would you call it?

Veggie Pulp Burgers With Wasabi Guacamole

Don't know what to do with all of that juice pulp? Here's an easy fix to that problem. Only thing missing in this photo are the broccoli sprouts, and maybe a slice of raw bread.  I plan on freezing anything that is left, which makes last minute dinner prep super easy. Just remove from freezer and let defrost, or pop in dehydrator. Cut up some fresh veggies, a nice salad, sprouts and you have a feast!

StRAWganoff - Mushroom Stroganoff (Nutless)

Another really quick and easy throw-it-together meal. I LOVE zucchini noodles. There are so many creative ways to serve them. I was on my own for the week and didn't feel like fussing in the kitchen. I literally threw this meal together in a matter of minutes. It's a keeper!

Wild Mushroom and Spinach Quiche

Follow the steps one at a time and these are  not difficult to make. PATIENCE is an asset here, however, because they do require quite a bit of dehydration time. My little beauties are still dehydrating...so I'll let you know when they are done...

Spaghetti Mushroom Alfredo

This tasty dish is a winner and can be modified in so many ways. Add spinach, bok choy, green beans, slivered almonds, etc. Start with the basic recipe and let your imagination soar!

Pasta Primavera With Alfredo Sauce

Creamy and rich - So quick and easy to make! Great on raw or cooked noodles if you are transitioning. I mix kelp noodles and spiralized zucchini together. For W, I mixed artichoke pasta with softened kelp noodles  with tons of veggies, and a dollop of "Alfredo" sauce, topped with a sprinkle of "parmesan" cheese and you are good to go!

Primavera Frittata

This is so simple and quick to make and it serves up beautifully. Yummy enough to serve to your non-raw foodie friends. I used a large round cookie cutter as a mold, so you could make mini frittata as an appetizer that would look outstanding and totally impress your guests!

Pad Thai

Another one of my favorite recipes...yum yum yum. I made this previously for non-raw foodies..and they LOVED it! Don't be afraid to experiment using many different veggies. It all comes out good!

Veggie Pot Pie

Creating a raw version of comfort food is always fun for me. Baked Macaroni and Cheese was one of these, and now, Veggie Pot Pie. I still need to do a little work on the crust and will update that as soon as I figure it out, but the filling was de-lish. Serving the filling over spiralized zucchini would be a fabulous option!

Eggplant Lasagna Medley

A scrumptious medley using two variations of tender baby eggplant and three delicious types of mushrooms makes this dish quick and easy to prepare. It's very reminiscent of cooked food, and nice to gently warm on a cold winter day.

Spaghetti With Sausage And Peppers

It's so wonderful to be able to sit down, eat a plate of sausage, peppers, onions and mushrooms, over pasta, and not feel all stuffed and bloated afterward!!! And here's a sneaky way to add more greens that your kids and family won't suspect: toss some chopped kale into the blender with your marinara sauce. This tasty dish was served over a combination of kelp and spiralized zucchini.

Marinated Portobello Mushrooms - Filet Mignon

Time to make this recipe again!

The mushrooms in this marinade are heaven. I had some leftover marinated mushrooms and put them in my salad. Terrific!

Chinese Veggie Stir-Fry Surprise

And the surprise is..It's NOT stir-fried at all - It's RAW! One of W's favorite SAD meals is Chinese Stir-Fry, Spicy Garlic "Anything." I've been wondering if I could create a raw dish that resembled our Chinese stir-fry. Unbelievable! The veggies turn out brightly colored and crisp, yet tender. Perfect!

We made enough for 4 people and there was barely any left over! We both kept going back for more...and more..and more... Thumbs up on this one!

Rawfully Tempting Veggie Burger

I've tried Ani's Sun Burger and it was okay, but had too much flax for my taste. I like the consistency and flavor of this new recipe. It's just what I was looking for. I served it with a couple of slices of Sprouted Kamut Olive Bread I had in the freezer, and topped the burger with avocado, red onion, tomato, lettuce, and a couple of raw Peruvian olives. A raw catsup pairs nicely with this.

Creamy Wild Mushroom and Spinach Pasta

Inspired by this delicious quiche recipe, I concocted an incredibly tasty cream sauce, served over a combination of kelp and zucchini noodles.  I also used Eden's artichoke pasta (in photo), for W. I don't do pasta, but will allow myself a very small helping of these.

The recipe is a KEEPER!

Wild Mushroom and Spinach Stuffed Pepper

I had a lot of quiche stuffing leftover from the previous recipe and someone suggested stuffing it into a bell pepper. I used a beautiful orange bell pepper. I'm going to put it in the dehydrator for a few hours, really condense the flavors, and soften the pepper. It sure looks yummy!

Marinated Portobello Filet Mignon - Raw

Portobello mushrooms, the Filet Mignon of veggies! This is one of the tastiest, mouth-watering mushroom recipes. It's smoky essence and rich texture create a truly "meaty" dish that should satisfy the tastebuds of any family member or friend that thinks raw is boring.

The good news - it's EASY and takes very little time to prepare, however, I opted to dehydrate the veggies while they were marinating, making them tender, and slightly crisp. While it's not required, I prefer veggies with a "roasted" or "stir-fried" consistency over hard, crunchy ones.  Plan a little extra time if you want to dehydrate this dish, (or warm in your oven on LOW).
