Avocado, Mango, Lime and Black Bean Salad

I walked into the kitchen and noticed I had some extra mangoes that needed to be used.up. What to do, what to do? Then I remembered my dear friend Chef Dosa had made a black bean salad with mango and avocado when she was here once and we really enjoyed it. I got an idea for some additional ingredients and this is what I came up with. I served it on a bed of mixed greens, along with some spicy sesame crackers that I prepared from my leftover almond pulp. While the beans are not raw, the rest certainly is. Feel free to modify this as you see fit. This had a Summery feel to it making me long for warmer weather.

Zippy Red Lentil Burgers

These are obviously not raw, but if you are transitioning to a plant based diet, and crave a bit of cooked food on a cold, Winter evening, these are super yummy and easy to prepare. Dairy free Yogurt Sauce on the side. Yummmmy! You can make raw fermented yogurt from almonds...recipe posted elsewhere on this blog. But here is a quick mock yogurt.

Garden Chickpea Fritters and Dip(Tzatziki)

These were such a pleasant surprise. Sprouting took about 3 days and when I took a bite into one of them, I almost gagged. Seriously! I do not like the raw taste of them...alone. But I was determined and figured no one would post a recipe if it  truly tasted that bad. (However, I didn't have much luck with the jicama salad...peeps swore it was great, and I ended up dumping it.) Not two failures in one week for me! No Way!..So gave this a try...

Raw Parsnip Rice (with Garden Chickpea Fritters and Tzatziki)


Garden  Chickpea Fritters and Tzatziki accompanied Parsnip Rice by Russell James, from issue 18 of News From The Kitchen.

I can't say they're my all-time favorite, but definitely tasty. I think these would make a better appetizer than main course because the flavor is pretty intense. W insists they tasted like "crab fritters" and threw a sprinkle of "Old Bay" on a couple of them. (I didn't say a word!).

Zippy Black Bean Burgers on Mediterranean Almond Bread

Last night some frozen "leftovers" came in very handy. I removed both the Mediterranean Almond Bread and Zippy Black Bean Burgers from the freezer and placed them in the D for a few hours. I made W a scrumptious "cheeseburger" on the bread with lettuce, avocado mayonnaise, veggie mac cheese spread, sliced tomato and red onion. He loved it.

Black-Eyed Pea (Not Quite) Fritters and Dipping Sauce

After our busy day yesterday, I was really too tired to fuss and was happy to find this fairly simple recipe from "Cooking the Whole Foods Way."I made some changes to suit my requirements and combined these little fritters with the leftover kelp and soba noodles, and added a small salad. I try to avoid fried foods, but managed to use very little oil, just enough to brown the outer layer. It was yummy with a spicy dipping sauce.

Garbanzo Beans, Mushrooms, Zucchini and Rice

It's Christmas Eve and we have to get up very early and drive 2.5 hours to see my girlies and family. By girlies, I am of course referring to my two daughters, and my precious granddaughter.
A few other family members will be there...
