I am extremely grateful for the blessings in my life...for the people near and dear to me...and for the gift of Living Food! This Pumpkin-like Cheesecake, along with the amazing Frosting added a sweet bit of bliss to an already perfect day! This dessert has been enjoyed by ALL sorts of foodies!

Brownie Cake with Mocha Almond Fudge Cream
Okay you gluten-free, dairy-free, health nuts...I purchased these cute molds and wanted to try something super decadent. Drooling yet? If you don't have access to this type of mold, no worries...use the cake recipe as a deep dish crust and fill with the Mocha Almond Cream. You may have some extra brownie cake batter - SHUCKS! Eat it as is, freeze it in small molds for a fun frozen treat, or create little brownies with cake mixture, stuffed with cream and dehydrate for a several hours. Decadent AND nutritious. No bake...no guilt.

White Chocolate - Raspberry Cheesecake
A dear friend of ours brought over some fresh picked raspberries. Oh, what to do....CHEESECAKE! The blend of white chocolate and fresh raspberries made my mouth water and my taste buds tingle with delight! I love these mini 4" spring form pans. Instead of one cake, I made two miniature cheesecakes and brought one to a friend's house for lunch! This way W got to have some too! Otherwise, I'd make this in a 7" spring-form pan. Or, skip the crust, and pour into individual goblets and serve as a delicious mousse. Enjoy!

White Chocolate Cheesecake - Happy Anniversary W!!!
I made this over the holidays for my family and my daughter thought it was such a hit, she declared, "Mom, Mom...you need to sell these..seriously, they are amazing...and no one has to know they are healthy." Although, I wished she were more enthusiastic in appreciating the healthy factor as a positive thing, I still took what she said as a huge compliment. I just re-created the recipe for my 6th anniversary with W, and it came out super light and fluffy.

APPLE CIDER DONUTS
The air is cool and crisp, back into long sleeves, and snuggling under the blanket at night while watching TV, or listening to music. Apples are so scrumptious right now, I have them for lunch every day. After working on my previous Apple Walnut Muffins, I was reminded of the days we used to take our kids to the farm, pick apples and feast on Apple Cider Donuts.

Strawberry Custard Cream Pie
I made this awhile ago, and never posted it. Someone asked for it, so here ya go. This is a nice light summer treat, and the only nuts are in the crust, so you could make the "custard" without it, if you wanted to avoid nuts altogether. I didn't measure everything, so the recipe below is approximate. Good thing about raw food, is you can taste it as you go along. So...taste it and adjust measurements as you see fit!

Raw Vegan Blueberry Cheesecake
- What a light and pleasant surprise. This cheesecake is so light and refreshing, and a great summer snack. Chocolate Silk Mousse Cake
H E A V E N L Y! I loved it because unlike processed chocolate mousse, this had a lovely bittersweet flavor. Creamy and rich, but not too sweet. The consistency was fabulous!

Magnificent Chocolate Ganache
A rich, dark chocolate dessert that has lots of uses. It can be used for decorating, filling, icing, or whipped up and enjoyed like mousse.
Coconut oil is a common ingredient in many cacao treats, and it works quite well. Personally, however, I don't always want my dessert to taste like coconut. I've been experimenting with cacao butter and cacao paste and OH MY GOODNESS...while they may be a bit pricey, these ingredients really step your sweet treats up a notch or two!!! And, a little goes a long way!

Double Fudge "Peanut Butter" and Banana Layer Cake
I made one of these for an Anniversary cake and another one for a dinner party. Didn't they come out so pretty?
The frosting and filling came out extremely tasty!!! Both cakes disappeared very quickly. The Anniversary couple had some leftover to share with their family. Hopefully they enjoyed it too! This is a bit of a project, but I've tried to break it down step by step. You can do it!

Creamy Chocolate Mousse Cake
Fabulous!Creamy! Rich, chocolaty, and not too sweet. I added an optional middle layer, using some Almond Butter Chia Pudding and added a tiny bit of psyllium husk powder to thicken it up. The middle layer blended into the rest of the cake.....but you can see a thin light colored line thru the middle. That's the pudding!

Vanilla Strawberry Cupcakes
This was my very first raw cupcake. Pretty tasty, especially if you are a strawberry fan. W LOVES them! I still want to do some tweaking on the cupcake part, and I'd make mini cupcakes next time. These things are pretty dense.They'd make a great breakfast!

Lemon Cheesecake (Topped with Pineapple Sauce)
For his 60th birthday, W wanted something lemon this year...so I came up with a Lemon Cheesecake, topped with pineapple sauce. It turned out fabulous, although we all agreed it tasted better without the pineapple sauce. Maybe strawberries or blueberries would be even better. But the lemon cheesecake was awesome and tasted even better the second day. Very light and creamy. The Birthday Boy was very happy!

Rawfully Tempting Super Energizing Brownies
Chock full of super foods like hemp seeds, flax seeds, chia seeds, sunflower seeds, sprouted buckwheat, goji berries, and more...these little brownies pack quite a punch. I'm thrilled with the chewy, cake consistency, that is really hard to achieve with raw treats. Biting into these feels just like a baked brownie. (And they smelled good too)! I need to do a little tweaking...but these are wonderful!!!
