Horseradish 'n Dill Crackers/Bread

As part of my recent exploration into "my roots," I prepared fresh Horseradish. It was deeply earthy and delicious. From that recipe, I made a Horseradish Hummus/Dipwhich was lighter in texture, but also fabulous. I needed some crunchy crackers... So what else? Horseradish  'n Dill Crackers, of course! The horseradish flavor turned out rather mild  while the dill seems to permeate the crackers. I love dill, so it works for me, and I can spread either horseradish or the hummus on them. If you're not a fan of dill, replace it with another herb. Walnut crackers are great! Walnuts give a richness, extra crunch, and a splendid nutty tone. This recipe may also be prepared as a bread.

Dill and Caraway Wraps (with Spirulina)

Looking for something a little different, with an extra kick of super nutrition? Try one of these special GREEN wraps!!! I'm going to re-work this one a bit. It's pretty intense..You can stuff it with a Sunflower Seed Pate, Walnut Pate, salad, hummus, whatever your pleasure. I made these rather thin and they dehydrated within 5 hours.

Veggie Crisps, Wraps or Bullion "Cubes"

Pour the Sauce below over spiralized zucchini, or spread on dehydrator sheets for zippy crisps, or flexible wraps. Recipe Updated! Do not be intimidated with sprouted flours. Replace with almond flour if you so choose. I highly suggest you read my blog on how to sprout grains. It's awesome to dehydrate, grind and store flours in freezer so you have them whenever you need them. I always have a selection of flours to choose from. Quinoa, oat, buckwheat, barley, etc.

Green Smoothie Mish Mash

I've been juicing the past few days and W wanted a smoothie today, so I literally threw this together. I was surprised at how yummy it tasted. After creating this, I added some cacao powder to a bit of the mixture and layered it and roughly mixed it by hand, creating a camouflage smoothie..see below. This was really good, but I can't believe how heavy it felt after several days of juicing..wow!

Creamy Veggie Sauce on Zucchini Pasta

This delicious recipe is so quick and easy and I was amazed how satisfying it felt. It's very cold here today and there was a concern that this would not feel so good. Boy was I wrong! I enjoyed this meal without even warming it up. Adding a bit of Spicy Kim Chi helped add a bit of warmth to the dish, and using delicious ready-made Kim Chi made this recipe super simple!. This is a keeper.

"Rye" Wraps

Last week I made an Onion Wrap and it was delicious. This time, I wanted to experiment with the recipe. Getting just the right thickness is a little tricky,  but they really are pretty easy to throw together.

These are very similar to the Onion Wrap, however, I added 1 cup of veggie pulp from juicing (carrots, celery, kale, dandelion, apple, cucumber, etc). I also cut down on the onion a bit, and added a couple of teaspoons of caraway seeds to the batter, which gives this recipe a lovely "rye" bread taste that W and I both adore..

Pistachio Crisps/Crackers

Still on a pistachio kick! The other day we made that delicious Pistachio Green Dream Smoothie, right? Well, I had some gorgeous pistachio pulp left over and decided to use this and create a new cracker recipe. I ended up with these fantastic crisps. Eat as is, or smear with some luxurious Pistachio Butter.  If you are missing crunchy munchies...you will love these!

Veggie Pulp Burgers With Wasabi Guacamole

Don't know what to do with all of that juice pulp? Here's an easy fix to that problem. Only thing missing in this photo are the broccoli sprouts, and maybe a slice of raw bread.  I plan on freezing anything that is left, which makes last minute dinner prep super easy. Just remove from freezer and let defrost, or pop in dehydrator. Cut up some fresh veggies, a nice salad, sprouts and you have a feast!

Red Hot Fire cRAWkers

These are somewhat similar to Veggie Crisps, but spicier, with a strong cumin/lime flavor. Great with salsa!!! Just like the Veggie Crisps, the flavor POPS in your mouth and really titillates your taste buds!! They are loaded with kale, celery tops, parsley, hemp, flax, and other nutrient dense foods. Unlike flax crackers, these are light, and can be spread thin to create a potato chip consistency, or  a little thicker, to make a crunchy cracker. I LOVE THESE!  Use your own veggie pulp and seasonings and create your own version.

Carrot Cake

My first attempt at a moist, rich carrot cake creation. My "professional taster", W LOVED it. I don't use a lot of sweeteners, but I think this one needs a little more "sweets" than I added. Otherwise, the texture and flavor are fabulous. I'm excited to get a texture so close to the SAD version.

Vanilla Strawberry Cupcakes

This was my very first raw cupcake. Pretty tasty, especially if you are a strawberry fan. W LOVES them! I still want to do some tweaking on the cupcake part, and I'd make mini cupcakes next time. These things are pretty dense. They'd make a great breakfast!

Raw Almond Herb Bread

Inspired by Russell James' Mediterranean Almond Bread, I loved the original, but wanted something a little different and created this lighter, not so "herby" version. Super rich and satisfying.
