Tropical Chia Pudding

Delicious summer pudding with the benefits of chia seeds!!! This recipe is a base start you in the right direction. I like to play with new ingredients, especially sweeteners, but you can feel free to substitute any of these...





Tropical Chia Pudding
1 cup macadamia milk (or other nut milk)
1 cup coconut water 
1 cup coconut meat
1 1/2  cup  mango
1 cup papaya 
1 tsp  coconut oil
2 Tablespoons yacon syrup (optional)
1 Tbsp maple syrup - grade B (or your fav sweetener)
1/2  tsp  vanilla (2 drops Medicine Flower Vanilla Extract)
4 drops Medicine Flower Mango Extract (optional)
2 drops Medicine Flower Passion Fruit Extract (optional)
1/4  cup ground chia seeds (I used white chia seeds - gives pudding a nicer color)
pinch sea salt

In high speed blender, mix nut milk, coconut water and coconut meat.

Add remaining ingredients, saving chia seeds for last. Blend until very creamy.

It will start to thicken quickly. It will thicken a bit more as it chills, but should be pretty thick. Add more ground chia seeds as needed.

Pour into serving bowls and chill.

Drizzle with your favorite chocolate sauce and serve.
