Magnificent Mango Pudding

Well, you all know how much I love mangoes! This tastes great with regular mangoes, but if you can get Champagne mangoes - I suggest you give them a try!



Magnificent Mango Pudding
1/2 cup macadamia nuts
1/4 cup cashews (soaked 2 hours)
1 cup young coconut meat(or 3/4 cup dried unsweetened coconut)
2 cups of coconut water (or filtered water)
1/2 cup filtered water, only as needed to blend
3 champagne mangoes (or 2 mangoes), pitted and sliced
1 Tbsp raw honey (or your fav sweetener)
1 tsp coconut oil, melted
4 Tbsp white chia seeds , ground
1/8 tsp grated ginger
2 drops *Medicine Flower Mango Extract - optional
1/2 tsp vanilla extract (or 2 drops *Medicine Flower Vanilla Extract - my favorite vanilla)
pinch of sea salt

In high speed blender, mix nuts, coconut meat, and water(s).

Add mangoes and blend.

Using a coffee or nut and seed grinder, grind chia seeds to a fine powder. Add  with remaining ingredients to the pudding mixture, and blend until very creamy.

Chill to set, and serve. Garnish with fresh mango slices, shredded coconut, and/or chopped nuts.

This can also be frozen and turned through a juicer with the blank screen, or re-blended to make a delicious ice cream.

*Note -  Mixture should be thick and creamy, and it will thicken more as it chills in refrigerator.
