Mint Carob Smoothie

I received a complimentary jar of Living Tree CommunitAlmond Tahini Carob Butter. All I can say is - LTC - you've created another WINNER! Eat it right off the spoon, spread on dehydrated crackers, or add  it to smoothies, puddings, "cheesecakes," etc.

Cilantro is one of few herbs used as a heavy metal detox agent.  It's also known for natural antibiotic, anti-cancer, anti-inflammatory, and anti-microbial properties. It's credited for regulating blood sugar, lowering cholesterol, boosting immune system, improving sleep, and much more! Cilantro leaves and seeds are both used as condiments and therefore, it's an herb and a spice.

I'm currently in the process of removing my old mercury amalgam fillings, and loading up on cilantro. The flavor can be a bit strong for most smoothies, but in this case, the cilantro marries miraculously with these ingredients. Earthy, delicious and satisfying!

Mint Carob Smoothie Ingredients
1 young Thai coconut (water and meat) plus water (or water kefir) as needed for 2 smoothies
1 frozen banana
3 Tablespoons chia seeds
2 medjool dates, pitted
handful of dandelion greens
1/2 - 1cup cilantro
1/4 cup parsley
1/2 small beet, chopped
2" chunk ginger (peeled and chopped)
2 Tablespoons Living Tree Community Almond Tahini Carob Butter
1 Tablespoon cacao powder
1 teaspoon mesquite powder (optional)
2 drops Medicine Flower mint extract (or fresh mint, to taste)
ice, as needed to blend

Blend coconut water, meat, banana, chia and dates.
Add greens, beets and ginger. Blend until creamy.
Add remaining ingredients, to taste. Blend and serve.
