Chocolate - Butterscotch Mousse Parfait

One of my favorite dessert recipes ever! I make so many different variations of this and rarely ever measure. The recipe below is just a base, but you can make this in almost any flavor using extracts and things like mesquite, lucuma, macca, fruit, etc. This is one of my favorite combinations!. I hope you enjoy it too!

Want a lighter body? Use less cashews and more coconut meat. Easy to switch up and change consistency. Sometimes, I hardly use any cashews at all.

Butterscotch Mousse Ingredients
3/4 cup cashews, soaked 2 hours
2 cups, young Thai coconut water,(or water)
1 cup young coconut meat
2 Tablespoons nut butter (optional)
1/4 cup maple syrup (grade B) or your fav sweetener
1/2 tsp vanilla extract or (2 drops  Medicine Flower Vanilla extract)
4 drops Medicine Flower Butterscotch extract.(or 1 teaspoon butterscotch extract)
3 - 4 Tablespoons chia seeds
1/4 teaspoon sea salt

Chocolate Mousse Ingredients
1/2 Butterscotch Mousse batter  (above)
3 - 4 Tbsp cacao powder
1 Tbsp cacao nibs (optional)

Directions
Blend nuts, coconut water and coconut meat until creamy. Add nut butter, maple syrup, extracts, and blend well.

Add chia and sea salt, and more water if needed. Mixture will thicken when chilled, but should be pretty thick at this point.  If not, add more chia. Coconut water really enhances the flavor of this recipe, so if you are lucky enough to find them...bonus for you! Otherwise, use water...it will still be yummy!

Pour half of  of Butterscotch mixture into parfait or glass jars.

To remaining mixture add, cacao powder, nibs and a little more sweetener if needed. (Cacao will make it a bit bitter).  Pour this mixture over Butterscotch or alternate more layers as desired)..

Garnish with chopped nuts, coconut, and/or grated cacao nibs. Chill for at least 30 min, and serve.
