Nutless Super Green Powered Pudding (Mango)

I've been having a love affair with chia seeds and chia pudding. I've also started exploring Irish moss, which adds a FABULOUS silky consistency to pudding or mousse.

Since these two ingredients are so amazing, I figured I might as well add some fabulous energizing ingredients together and create a super charged green chia pudding with no nuts!

There is so much flexibility with chia pudding. I could probably write a recipe book with hundreds of chia pudding varieties. Use your imagination. Have fun! This is just a starting point for you, a way to get your greens and  yummy chia goodness, in a cool, creamy, Rawfully Tempting delight...all in one!

Super Green Powered Chia Pudding
1 1/2  cups coconut water (or filtered water)
1/2  cup filtered water (or more coconut water, if you have it)
1 cup coconut meat
3 cups kale, dandelion or mixed greens
1 banana, frozen
1 tsp lucuma
1 Tbsp hemp seed
1/2 cup *Irish moss paste (Optional: replace with more chia)
1 Tbsp tahini
2 Tbsp yacon syrup
2 tsp coconut butter
4 drops vanilla extract (by Medicine Flower or pinch of vanilla bean powder)
3 drops  mango extract (by Medicine Flower -or your favorite extract)
   pinch of sea salt

1 tsp spirulina  (optional - for you tough cookies out there!)
1/4  cup ground chia seeds


In blender, mix coconut water, meat and water.

Add greens. ( I fill the blender about 3/4 with greens) and blend well.

Add remaining ingredients, except for ground chia seeds.

Taste and add dates or sweetener as needed.

Add chia seeds, blend well and pour into serving dishes. Add more ground chia seeds for a thicker consistency pudding.

Chill for at least 1 hours and garnish with shredded coconut.

Options: instead of Mango, use any other flavor extract that you enjoy!!! Try rum, raspberry, strawberry, chocolate mint, etc. The varieties are endless!!!


*Preparation Tip: *Irish Moss Paste - Soak handful of moss in water in refrigerator 6 - 12 hours, rinse and replace water twice.

Rinse. Chop 1 cup of moss in small pieces. (Place any extra soaked moss back into fresh water and refrigerate for up to ten days)

Blend 1 cup soaked and chopped Irish moss with 2 cups water. Blend well, and frequently scrape sides of blender. Make sure there are no small pieces... be patient.  Refrigerate remaining paste for up to 2 weeks. (Works great on skin as a mask too!)
