I was trying to duplicate "Vienna Fingers" we ate growing up. I won't say they taste exactly like them. Nope, but I have to say I think these taste way BETTER. I'm a chocolate person, but these have such an incredible 'nilla flavor, I found them addictive!!!!
'Nilla Fingers
1cup almonds (soaked overnight and peeled)
1/2 cup macadamia nuts
1/2 cup water (as needed)
4 drops Medicine Flower Vanilla Extract (or pinch van bean powder)
1 drop Medicine Flower Lemon Extract (or lemon zest)
pinch vanilla bean powder
3 Tbsp honey
2 Tbsp yacon syrup
1 Tbsp ground golden flax seed
2 Tbsp almond flour (or finely ground, dried nut pulp)
pinch sea salt
Kreme Filling
3/4 cup shredded coconut, finely ground
3 drops Medicine Flower Vanilla Extract (or pinch van bean powder)
1 drop Medicine Flower Lemon Extract
3 Tbsp water (as needed to thin)
2 Tbsp honey (or clear agave) to taste
Cookie Preparation
Blend nuts and water well. Add remaining ingredients and blend until very creamy.
Pour onto non-stick dehydrator sheet and spread with offset spatula - about 1/8" thick.
Dehydrate at 145 degrees for 1.5 hours and turn down to 105 degrees another 8 hours.
Flip onto mesh dehydrator tray and peel off non-stick sheet. Cut into strips, about 1/2 - 3/4 inch wide and then into finger sized rectangles (equal in size). Option: use a small circle cookie cutter and make rounds.
Dehydrate another 6-8 hours, flipping over once.
Kreme Filling Preparation
Process shredded coconut in a spice or coffee grinder until a fine powder.
Transfer to a bowl and add remaining ingredients, adding only enough water to make spreadable.
Assembly
Spread small amount of Kreme on each cookie and dehydrate for several hours.
Press two cookies together, kreme inside and dehydrate several hours. They should be dry on outside, but still chewy.
Option: No Kreme..just plain wafers are delicious. (See square cookies below).
