Using a basic Macadamia Nut Cheese, I created this sweet version. It's a great companion for my Crazy, Nutsy Banana Bread.It's also great on raw crackers or fruit.
Sweet Macadamia Nut Cheese
2 cups raw macadamia nuts (soaked 1 hour).
Add water to barely cover nuts in blender. Blend until very creamy. Add more water as needed to blend as needed, but not too much.
Transfer from blender into a nut milk bag (nylon mesh bag) or cheese cloth. Place bag over a large bowl to catch the cream. (us for soups, desserts, smoothies, etc). Slowly squeeze the cream from the bag, pressing, massaging, kneading the bag, until you have a nice hunk of "cream cheese" in bag.
Transfer to a glass bowl and get creative flavoring your cheese. Add some raw honey, maple syrup, yacon syrup, or agave. You can also add finely chopped dates and nuts to the cheese, mix well. Stir in soaked goji berries and raisins. Use your imagination.
Chill to set and spread on bread, or use as a veggie dip. YUmmmmmmmmmmmm!!!!
