Raw Vegan Bacon Strips

I’ve seen it,  but I didn’t believe it,  and decided to try it.
Personally, it was okay. I have to admit, I was lazy and didn’t let it marinate the way most folks say to. I sliced the eggplant with a peeler, put it in a large bowl and added olive oil, vinegar, chili powder and nama shoyu. After massaging  it into the eggplant with my fingers, I placed it onto a paraflexx sheet and dehydrated for several hours. I am not thrilled with the taste, although, I did crumble some onto a salad and that was pretty good. It’s very salty and even though I used the slightest amount of chili powder, its pretty zippy. Maybe I’ll try it again sometime with different spices. If any of you have tried this with different spices and really liked it, let me know. But it looks cool Hahah! Just not sure I’d munch on this as a stand alone.                                                                                        
Here is a link someone posted to Matthew Kenney's bacon recipe. Ahh, I see he used maple syrup and I think mine would taste much better with either maple syrup or agave..so give this one a try. When I can eat honey and maple syrup again, I will def check it out.  (Gotta love his photographer!!  Such sexy looking food! It looks sooo yummy and I am envious!!)

Eggplant bacon is one of my favourite snacks! I usually follow Matthew Kenney's recipe, but one thing I find makes it much tastier is adding a few drops of liquid smoke to the marinade. It imparts a very authentic smoky flavour to the strips. I also omit the olive oil.

Oh YUM! Good to know. I am still in the dark when it comes to liquid smoke. I'll have to do some more research on it. Here is another recipe I just found that looks and sounds fabulous too!

Next time, I'll be more patient and marinate the eggplant and give it a fair chance. Thanks for your feedback!
