Creamy Red Bell Pepper Soup

This is now one of my favorite raw soups. The color is beautiful. The aroma is fabulous. It's definitely something you could serve to SAD (Standard American Diet) guests and they would be impressed. It looks rich and lovely and its so quick and easy to make.



Red Bell Pepper Soup (aka Southern Belles in London recipe by Philip McCluskey)

Ingredients:
4 red peppers, seeded/ chopped
1 clove garlic
1 vidalia onion, chopped
1/4 cup sun dried tomatoes
(soaked in water until soft
1 tablespoon raw honey or agave
1 tablespoon olive oil
1 cup water
1/2 teaspoon chili powder
1/2 teaspoon oregano
1 tablespoon nutritional yeast (I used 1/2 Tbsp)
1 tablespoon miso
1/2 avocado (my addition)

Directions:
Blend all ingredients until smooth. Garnish with fresh cracked pepper and avocado slices.

If you'd prefer it warm, you can prepare it with warm water, however, we really enjoyed it cool.

Oh, my, I have just made this....with a few tweaks of my own (added parsley, no oil, no oregano).....and YUMMMMMMM. Thanks for the inspiration. Will definitely be making this again.

i'm happy to have stumbled upon your site. you're the first blogger i've come across who also suffers from interstitial cystitis. i am learning what types of food causes the symptoms and i've been feeling pretty good lately. hope you are too!=)

Thank you everyone! Welcome kelli! I definitely flare up from certain foods, but the IC Diet and just avoiding those foods, did not really help my IC. I'm glad you are feeling results.

I'm trying to heal my body and the reason I got the IC to begin with...get to the source..so it may take a bit longer. I did get myself into remission once for several years...when I started eating vegan. Then I stopped..it came back.

I've been doing raw for 6 mos...but it's not in remission yet...grrrr...hoping soon!!!

Keep me posted how you are doing.
