Brazil Nut Cookies

These were the first Brazil nut cookies I ever tried and this is still one of my favorite recipes. I found this keeper on The Renegade Health Show.

    





Brazil Nut Cookies
2 cups hemp seeds, ground
2 cups Brazil nuts, ground
1/2  cup honey, raw (or your fav sweetener)
1/2 cup coconut oil (I use much less)
2  tsp cinnamon
1 tsp vanilla extract (I use 3 drops Medicine Flower vanilla extract)
1/4  cup raisins or raw cacao bits (optional)
1 tsp  nutmeg
Pinch of sea salt

Soak raw brazil nuts 6-8 hours, or overnight. Let dry and grind in food processor or coffee/nut grinder. (I left mine a little on the course side.) 

Combine all ingredients in a large bowl and knead or massage until dough  is formed. Chill dough for 1 hour. 

Choices: roll dough and cut into shapes with cookie cutters, cut into square bars, or roll and shape by hand into balls and/or flatten into cookie rounds. 

Put in freezer until firm.  To store, keep in freezer. These are very addictive.
