I've seen this recipe posted in quite a few places and it's very popular. If you like a grainy, zippy chip, this is a great recipe. If you prefer a more traditional ,"cornier" chip try this recipe.
Jalapeno Corn Chips
Ingredients:
3 cups fresh corn, from about 3 ears (or use frozen, thawed sweet corn)
1 1/2 cup red or orange bell pepper
1/2 cup onion
1/3 cup water (only as needed to blend)
3/4 cup ground flax seeds
1/2 cup hemp seeds
1 Tbsp fresh lime juice
1– 2 jalapenos, seeds removed
1/4 tsp red (hot)chili powder
1/4 teaspoon chili powder
2 tsp cumin
2 tsp sea salt
dash cayenne powder
Directions:
- In a food processor, chop the corn, bell pepper, and onion until smooth. Add the remaining ingredients and process until just combined.
- Use an offset spatula, to spread the dough thinly onto 2 - 3 14 inch non-stick lined dehydrator trays. Dehydrate at 115 degrees for 6 – 8 hours.. Flip the sheets over onto the tray and slowly peel away the liners. Break or cut into chip shapes, using a pizza cutter. Dehydrator for another 6 hours, or until crisp. Store in an airtight container for a week or two.
