Cream of Asparagus Soup

Cool and refreshing. A great summer soup, garnished with a red pepper oil. Add a salad and you have a great meal.

Cream of Asparagus Soup (from Sweetly Raw).
Ingredients:
2 cups chopped asparagus
2 cups water
1 cup diced zucchini
1/2 large avocado
3 tablespoons chives, chopped
3 tablespoons nutritional yeast (I used 1 Tbsp)
2 tablespoons lemon juice
2 tablespoons olive oil
3/4 -1 teaspoon himalayan salt
2 marinated artichoke hearts (I added this. I doubt they are raw, but added a nice flavor).

Directions:
Blend all ingredients until completely smooth and creamy. Garnish with Red Pepper Oil.

For the Red Pepper Oil
1/2 large red pepper
6 tablespoons olive oil
Salt/lemon juice, to taste
1/8 teaspoon paprika

Blend until smooth.

  2. Thanks Heather. I forgot to add one ingredient...I mixed in some marinated artichoke hearts. I doubt they are raw, but they added a nice zing.
