Double Fudge "Peanut Butter" and Banana Layer Cake

I made one of these for an Anniversary cake and another one for a dinner party. Didn't they come out so pretty?

The frosting and filling came out extremely tasty!!! Both cakes disappeared very quickly. The Anniversary couple had some leftover to share with their family. Hopefully they enjoyed it too! This is a bit of a project, but I've tried to break it down step by step. You can do it!

Eggplant Lasagna Medley

A scrumptious medley using two variations of tender baby eggplant and three delicious types of mushrooms makes this dish quick and easy to prepare. It's very reminiscent of cooked food, and nice to gently warm on a cold winter day.

Cuckoo for Cacao Pops?

I found this recipe for Quinoa Cocoa Pops. They are a wonderful munchy snack, excellent to pack if you are traveling. They are loaded with nutrients and such a creative way to prepare sprouted quinoa. I added a little more cacao powder than the original recipe called for, along with a dash of cinnamon. This treat is such a nice change as It's hard for raw foodies to find sweet  and crunchy snack. She suggests serving it with nut milk as a cereal. That sounds delish!

Spaghetti With Sausage And Peppers

It's so wonderful to be able to sit down, eat a plate of sausage, peppers, onions and mushrooms, over pasta, and not feel all stuffed and bloated afterward!!! And here's a sneaky way to add more greens that your kids and family won't suspect: toss some chopped kale into the blender with your marinara sauce. This tasty dish was served over a combination of kelp and spiralized zucchini.

White Chocolate Chips

Another treat for making COOKIES...
Add a few drops of flavored extract and these lovelies can be made in almost any flavor to decorate and enhance your Rawfully Tempting treats! I'm thinking about coffee, mango, rum, almond, orange, raspberry, etc. Make your own trail mix by adding these chips to sunflower seeds, nuts, raisins, etc.


Looking Back...

I was so excited when  Blanca approached me to do an interview for friendseat.com last February. I revisited the interview the other day, and it was interesting to see where I was this time last year, in comparison with where I am currently. Please see my personal comments below about where I am today.

Peanut Sauce With Veggies with Noodles

I served this tasty dish over bean thread noodles. If you want to keep the dish 100 percent raw, use kelp or zucchini noodles. W loves bean thread noodles, especially in winter. This was yummy! It's all about choice, so you are free to serve this dish however you prefer. The sauce is super yum!

Marinated Portobello Mushrooms - Filet Mignon

Tip for Making Sprouted Oat Flour

*Tip: After your oats are sprouted and dehydrated, store them in the freezer prior to grinding. I find this makes grinding them into flour much easier. It also keeps the grains cooler, so they don't heat as much during the grinding process.

Kelp Noodles in Creamy Avocado Pepper Sauce

Simple, quick, light and delicious...adapted from a recipe by rawmama.  Kelp noodles are really fun, but you have to know how to use them, or they seem too rubbery. Soak them in water with a little lemon juice and see how soft they become. Their neutral flavor, gently accompanies whatever dressing or marinade you choose.  Sometimes I'll mix them with spiralized zucchini to add more texture.

Oatmeal Raisin Cookies

Okay, these are not something I'm going to snack on ever day, but, what a tasty treat! Gotta let yourself indulge once in awhile! Right? They are also a great dessert to make for non-raw foodies who would probably never know they are raw!

You all know how much I LOVE *Medicine Flower raw, organic extracts. Feel free to use whichever vanilla extract you like, but I swear the combination of the maple syrup and the MF vanilla, makes these cookies taste like they were made with BUTTER!!! What flavor!!!

Choco Crunchy, Munchy Buckwheat Treats - Sprouting Buckwheat

A fun, nutritious snack food, as is, but feel free to serve with a little nut milk, and enjoyed this as a healthy breakfast cereal. I gave it to W with some almond milk, raw sunflower seeds, goji berries, shredded coconut and a dash of cinnamon.  It was amazing!

This was an experiment and I don't have exact measurements. There are so many possibilities you can add to this. Be creative!
