Coconut Goji Bread

This bread is very reminiscent of date and nut bread or banana bread and can be served as either a dessert, snack, or breakfast bar since it's chock full of wonderful nutrients.

I don't have exact measurements for this bread, because I just threw the ingredients into a bowl as an experiment. I never expected it to come out so delicious!

A yummy mix of coconut meat, almond pulp, tahini, yacon syrup, goji berries, sunflower and ground flax seeds, coconut oil, and some vanilla and coconut flavored extracts. The kitchen smelled like there was a buttery cake baking in the oven! It was amazing.

Thank you maria. I never wrote this recipe down, sorry. I just mixed the ingredients listed above. Honestly, you could just give it a try..maybe use a coconut - meat and water, 1 cup of almond pulp, 1T tahini, 2 T yacon syrup or other sweetener, throw in some goji berries that have been soaked in water, 1/4 to 1/2 cup of sunflower seeds, 2 tsp coconut oil, vanilla extract, coconut extract(0ptional), pinch of sea salt...maybe some chopped walnuts..mix in processor and dehydrate. I am just guessing here, off the top of my head...but I bet it wouldn't taste bad at all!!!

okay, ,maybe two cups almond pulp..but you can tell by consistency..if it's too thin, add more pulp or almond meal.
